3 Delicious Campfire Egg Breakfast Recipes

Eggs are a great source of protein and can be cooked quickly in a myriad of ways. You love them at home, so why leave them off your outdoor menu? Check out these three easy and delicious campfire egg breakfasts that will make your mouth water!

1. Sausage Egg Boats

A hearty meal for breakfast, lunch, or dinner!

Ingredients

  • 4 small baguettes (sub rolls or another with a firm outside crust)
  • 1 pack of sausage links
  • 8 eggs
  • ½ cup heavy cream
  • 8 ounces grated cheese (cheddar, monterey, pepperjack – your choice!)
  • 3 thinly sliced green onions
  • salt/pepper to taste

Cut and pull out the middle of the baguette, leaving ½ of bread on all sides and the bottom. Cut up the cooked sausage (you can use any kind of sausage, cook it at home first and freeze before your trip, or fry it up at the campsite). Beat the eggs and cream, add the remaining ingredients and pour into baguette boats. Wrap in foil and bake over the fire for 25-28 minutes, or until set in the center. Let cool for 10 minutes before serving.

To pre-cook at home, follow directions above but bake unwrapped on a baking sheet in a 350 degree oven. Then wrap in foil and reheat on your fire.

Campfire French Toast

A quick and simple recipe that is just as simple in the woods as in your kitchen!

Ingredients

  • bread slices (2 per serving)
  • eggs (1 per 2 slices of bread)
  • cinnamon (¼ teaspoon per egg)
  • powdered sugar
  • maple syrup

Whisk egg and cinnamon in a bowl and coat bread slices thoroughly. Fry bread in a frying pan or skillet until golden brown on both sides. Serve with a sprinkle of powdered sugar and drizzle of maple syrup.

Paper Bag Eggs

A classic recipe that is simple to make, and even easier to clean up!

Ingredients (per serving)

  • 2 strips of fatty bacon
  • 1 egg
  • salt & pepper
  • hot sauce/ketchup (if desired)
  • 1 paper lunch bag
  • 1 green, pointy stick

Cut the bacon strips in half, line the bottom of the paper bag with the bacon making a nest for the eggs. Crack the egg into the nest. Fold the bag closed, folding it over twice. Poke a hole in the thickest part of the fold with the stick (use a knife or scissor if needed to make the hole). Thread the stick through the hole and hold the bag up over your campfire (not too low!). You want the bacon to cook slowly, which will release the fat and “fry” the egg.

Once the egg is cooked, season with salt, pepper, hot sauce or ketchup, and dig in. You can eat your meal right from the bag, but use a plate or tabletop to keep the hot grease from the bag off your lap.
